A popular bakery with numerous locations in Japan, known for having truffle flavored breads and pastries
Intro – We are fans of truffle and truffle-flavored items so we wanted to check this place out. I also really enjoy eating breads and sweets for breakfast so it was a no brainer to go check it out. We went to the location in Osaka but I don’t think their menu items change from location to location.
Ambiance – Small but really modern and upscale wooden and glass aesthetic
What we ordered
- White Truffle Salt Bread – This bread absolutely blew my mind. This was the best bread that I had in Japan, hands down. Picking it up, it was light as air. It was also a little greasy but I didn’t mind. You can smell the aroma of truffle as soon as you take it out of the bag. I took a bite and it the first thing that surprised me was the crunch. I’ve never had salt bread before but I know it was getting really popular in Korea. I understand the hype now. It has a super crispy bottom because the bread was basically frying in the truffle butter that was rolled inside it. The butter oozes out perfuming the outside during baking, and it leaves a super hollow and airy interior. It’s not like a honeycomb structure like a croissant but it is still super light and airy. The second thing that surprised me was how soft and pillowy the bread was. It was as soft as bread from 85C Bakery but it still had a little bounce, unlike 85C where the bread collapses in itself. Lastly, the amount of salt was so pleasant and the truffle flavor was so salient. It was the most beautiful symphony of texture and flavor that I’ve experienced in a bread. Rating 9.3/10
- Tartine – It was listed as tartine on the website but I think it was a misnomer. Its more of a cream-filled brioche with a sweet crunchy topping. It was reminiscent of a Chinese pineapple bun, which is one of my all-time favorite breads. The bread was really light and soft and the crunchy top was pleasantly sweet and a little salty. There was no truffle flavor in this one but I don’t think truffle would have worked here. The custard is typical of other custards you would find in Japan. This one was nothing special, but it is just really well-executed custard bun. Rating 7.4.10
- Banana Bun – My wife loves bananas so we had to get one of these. The bread was again really soft but not that rich like a brioche so it didn’t overpower the filling. It was a banana and custard filling which tasted exactly like how it sounds. It was cool though that the banana was not too mushy even after being baked inside the bread. It was well executed again and just really nice high-quality bread. The flavor just isn’t mindblowing or a unique combination. Rating 7.2/10
Conclusion – The salt bread is the one thing that is a must-order, especially if you’ve never had salt bread before. The flavor and texture are just so amazing. The other breads are good too because their breads are just so soft but nothing mind-blowing. It’s amazing they’re able to have this quality and this many locations. I would highly recommend you check it out if it’s near one of your stops!
